The food sector — particularly animal-based products — is responsible for a significant share of anthropogenic greenhouse gas emissions and therefore plays an important role in the transition toward carbon neutrality. The Planetary Health Diet provides a framework for transforming food systems in a way that ensures healthy nutrition for a growing global population while remaining within planetary boundaries. The recommended diet is predominantly plant-based but still includes modest quantities of dairy products, meat, and fish (EAT-Lancet, 2019; 2025).

As a short introduction, I first want to present and explain the central graphic developed by the EAT-Lancet Commission: a plate visualizing the recommended proportions of vegetables, carbohydrates, dairy products, and meat within the Planetary Health Diet. This visual element will provide the audience with a clear and memorable introduction to the concept (EAT-Lancet, 2019; 2025). Following the feedback on my first draft, I will also include graphs from the latest food survey conducted on our campus, which indicate that a majority of students are willing to adopt a more plant-based diet (STW, 2025).

The second part of the poster will focus on implementing the Planetary Health Diet in university canteens. First, I plan to discuss how the guidelines developed by the EAT-Lancet Commission can be translated into communal dining settings, as the original framework primarily addresses individual consumption patterns. Since there is currently little research on this specific issue, I will present the proposal developed in a demand paper that I created together with fellow students last year (SFF, 2025). Secondly, I want to provide insights for other activists and interested individuals into how change can be achieved within public institutions. To do so, I will reflect on the different strategies we used to establish the Planetary Health Diet as a guideline for campus food offerings and evaluate which approaches proved effective and which were ultimately less worthwhile. These strategies included petitions, direct communication with sustainability representatives and university leadership, and, most importantly, participation in institutional assemblies (SFF, 2025). In this context, I am also considering addressing the extent to which democratic participation is genuinely possible within public institutions from a student perspective and highlight existing power imbalances within the Studierendenwerk Hamburg.

Finally, I want to briefly outline the ongoing and future steps required to achieve a fully sustainable diet on campus.

References:

EAT-Lancet Commission.
